Hot Chicken and Cold Beer. 

Whether you’re sitting in our house, your house, the backyard or the back of the truck, we make the traditional, uncommonly memorable.

The Post was born out of a deep love for fried chicken. Add to that a desire to pair it with delicious, food friendly, award-winning beer, and the hunt for a location was on.  When the old VFW #1771 property in Lafayette, Colorado became available in 2014, the Post Brewing Company was born. 

Chefs Dave Query and Brett Smith set about trying fried chicken all over the country - eating at every place they could and every place that was claiming to have the best bird around. And they tasted a few beers on the way just to be sure they were on to something fun.

After messing with a grip of different recipes - they settled on one that delivered the crispiest, juiciest, most delicious all-natural fried chicken, which just happened to be the one that was gluten free. We serve it with our kitchen’s take on vegetarian and seafood dishes, fresh salads, farm fresh and innovative sides - classics remade for modern times and tastes. 

We knew we wanted extraordinary beer, and coaxed brew master Bryan Selders to move west from his position at The DogFish Head Brewery.  At Bryan’s side since day one was  our current Brewmaster, Nick Tedeschi. Along the way Nick soaked up Bryan’s techniques, perfected a few of his own, and adopted Bryan's three tenants for beer making success that we still live by today: quality, balance and drinkability.  With that aim in mind, Nick’s beers have won lots of medals- you’ll see them posted up here in the restaurant with his big beer loving grin.
